INGREDIENTS

  • 6 Rebel Bakehouse Power Seeds Wellbeing Wraps
  • 2 free range chicken breasts (about 400g)
  • 4 rashers streaky bacon
  • 3 free range eggs
  • 1 baby cos lettuce, chopped
  • ¼ cup grated parmesan

For the Caesar mayo:

  • ½ cup mayonnaise
  • 1 anchovy, finely minced (optional)
  • 1 tsp Dijon mustard
  • ½ tsp Worcestershire sauce
  • 1 clove garlic, crushed
  • 1 tbsp lemon juice

METHOD

  1. To poach the chicken, place the chicken breasts in a medium saucepan and cover with water by at least 3 cm. Season the water generously with salt. Place the saucepan over a medium heat and bring to a steady simmer. Turn the heat down to low and cook gently for about 12 – 15 minutes until the chicken is cooked through. Remove from the poaching liquid and leave to rest.
  2. While the chicken is poaching, cook the bacon in a fry pan over medium heat for about 10 minutes until crispy. Remove from the pan and leave to cool before dicing into small bacon bits.
  3. Place the 3 eggs in a small saucepan filled with cold water. Place over a high-heat and bring to the boil. As soon as the water is boiling, remove from the heat and leave to sit. After 7 minutes, remove the eggs from the pot and run under cold water. Peel and cut into rounds.
  4. To make the Caesar dressing, place all the ingredients in a small bowl and whisk until smooth.
  5. Shred the poached chicken and place in a mixing bowl. Add half the Caesar dressing and toss to coat.
  6. Lay the wraps out on a clean surface. Spread a spoonful of the Caesar mayo down the middle of each wrap. Load each wrap up with chopped cos lettuce and the Caesar chicken mix. Top with chopped boiled eggs, bacon bits and grated parmesan.
  7. Roll up burrito style! Cut in half or serve whole.

Tip: For a quick dinner option, swap the poached chicken for a shredded hot rotisserie chicken from the supermarket.
