  • 2 Rebel Bakehouse Power Seeds Wellbeing Wraps
  • 1 avocado
  • 1 tsp lemon juice
  • 3 free range eggs
  • 100g cold smoked salmon
  • ¼ cup pickled red onion (recipe below)
  • 50g feta, crumbled
  • Microgreens & diced chives, to garnish

Takes 15 minutes to make


  1. Mash the avocado with a squeeze of lemon and season with salt and pepper. Set aside.
  2. In a bowl, whisk the eggs and season with salt. Add a splash of oil or butter to a large non-stick fry pan over medium heat. Add the eggs and use a rubber spatula or wooden spoon to make long sweeps across the pan until you have creamy curds and the scrambled eggs are softly set.
  3. Lay the wraps down on a clean surface. Spread the smashed avocado down the middle of each wrap. Load the scrambled eggs and top with smoked salmon & pickled onions. Garnish with crumbled feta, microgreens and diced chives.
  4. Roll up burrito style and serve whole or cut in half. Enjoy!



*Make your own pickled pink onions:

  • 1 red onion, sliced
  • ½ cup apple cider vinegar
  • 1 tsp salt
  • 1 tsp sugar

Pickled pink onions method:
To make the pickled onions, place the vinegar, salt & sugar in a small bowl and whisk until the salt & sugar have dissolved. Add the onion and toss to coat. Leave to sit at room temperature for at least an hour, or cover and chill in the fridge overnight.
