Our Golden Goodness Wellbeing Wraps make the perfect base for your next poke bowl! Pack with all your favourite vegetables and try our crispy soy sriracha salmon as the perfect topper.

INGREDIENTS

  • 2 Rebel Bakehouse Golden Goodness Wellbeing Wraps
  • 1 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tsp sesame seeds
  • 200g fresh salmon, skin removed and sliced into chunks
  • 1 microwave pouch brown rice
  • ¼ telegraph cucumber, diced
  • 1 avocado, diced
  • ½ cup wakame (seaweed salad)
  • ½ cup edamame beans
  • 1 carrot, peeled into ribbons
  • 1 spring onion, sliced into curls
  • 2 tbsp chilli oil, to serve

Takes 25 minutes to make

METHOD

  1. Spray or brush your wraps lightly with oil. Gently press each wrap into an oven proof bowl so the wrap is in a bowl shape. Bake in the oven or air fryer at 180°C for about 5 – 8 minutes, until lightly golden. Remove the wraps from the bowls and carefully transfer to a wire rack to cool.
  2. Whisk the soy sauce and sriracha in the bottom of a mixing bowl. Add the salmon and toss to coat.
  3. Place the salmon pieces in the air fryer or on an oven dish and sprinkle with sesame seeds. Bake for about 8 – 10 minutes at 200°C.
  4. Microwave your rice as per packet instructions.
  5. To assemble, fill the bottom of each Golden Goodness Wellbeing bowl with brown rice and top with diced cucumber, diced avocado, wakame, edamame and carrot ribbons. Add the pieces of crispy salmon to the middle of your poke bowl, drizzle over the chilli oil and sprinkle with spring onion.
