Enjoy our quick and delicious Capsicum & Roasted Garlic Wellbeing Wraps with lime slaw, smashed avocado, and Cajun fish. Ready in just 20 minutes, they’re perfect for weeknight dinners or refreshing summer lunches.
INGREDIENTS
For the jalapeño chimichurri & smashed avocado:
- 1 cup coriander, finely chopped
- ¼ cup pickled jalapeños, finely chopped
- 1 lime, squeezed
- 1 clove garlic, crushed
- 2 ripe avocados
For the lime slaw:
- 3 cups shredded red cabbage
- 1 lime, squeezed
For the Cajun fish:
- 400g fresh white fish fillets
- 2 tbsp Cajun seasoning
To Serve:
- 6 Rebel Bakehouse Capsicum & Roasted Garlic Wellbeing Wraps
- Extra lime wedges (optional)
- Fresh sliced jalapeños (optional)

METHOD
- To make the jalapeño chimichurri, place all the ingredients in a bowl, season with salt & pepper and mix to combine.
- Place the avocados in a bowl. Add 1 spoonful of the jalapeño chimichurri and roughly smash with a fork.
- Place the cabbage in a bowl, squeeze over the lime and season with salt. Toss to coat.
- Pat the fish dry then coat both sides with the Cajun seasoning and season with salt and pepper.
- Heat a large non-stick fry pan over medium-high heat. Add a small splash of oil or spray the pan with oil spray. When the pan is hot, add the fish and cook for about 2 – 3 minutes each side.
- Remove the fish from the pan and leave to cool slightly before flaking into large chunks.
- Load your Rebel Bakehouse Capsicum and Roasted Garlic Wellbeing Wraps with a handful of lime slaw & dollops of smashed avocado. Top with the Cajun fish and garnish with the jalapeño chimichurri. Serve with an extra squeeze of lime and fresh sliced jalapeños if you like it spicy!
